ground chicken



  • [1lb] Lean Ground Chicken
  • [2-4] Ripe Avocados
  • [1 T] Chopped Garlic
  • [1T] Chopped Shallots
  • [¼ Cup] Chicken Stock
  • [1/3 Cup] Diced Tomatoes
  • [2 T] Coconut Oil or Olive Oil
  • Fresh Cilantro
  • Salt
  • Pepper
  • Red Pepper Flakes
  • Dairy Free (Daiya) or Normal Shredded Cheese
  • Roasted Sweet Potatoes (Optional)


  1. In a medium sized skillet on medium heat add coconut oil, chopped garlic, chopped shallots and chicken stock in the pan and let it simmer for 2 minutes
  2. Then add lean ground chicken, diced tomatoes, salt, pepper and red pepper flakes stirring occasionally till the meat is cooked through out.
  3. Split Avocados in half, add cooked ground chicken and top with shredded cheese, fresh cilantro and Roasted Sweet Potatoes (optional)
