I have officially designated Sunday for soup making, I don’t know what it is about a Sunday that makes me want to wrap myself in a blanket, sit on the couch with my super hot husband and eat a yummy warm soup after a long busy week. This was the product of this weeks Sunday’s soup, it was so easy, I literally just chopped everything up and put it in a pot.
- 2 Mango’s
- 2 Avocados
- 3 Plum Tomatoes
- 1/4 c Red Onions
- 1- 1/2 c Vegetable Broth
- 1 T Minced Jalapeno
- 1 T Honey
- In a large pot over medium heat add vegetable broth and red onions, let simmer for 2-3 minutes
- Chop mango’s, tomatoes, avocado, cilantro and jalapeno and add into the large pot
- Let items simmer on medium heat for 20-25 minutes stirring occasionally, once done cooking place the ingredients into a food processor and puree
- Serve and Enjoy!
